Ingredients:

  • 4 large eggs
  • 1/2 cup Ginger Bread Honey
  • 2 cups whole milk
  • 1 cup heavy cream

Instructions:

  1. Separate the egg yolks from the whites. Place the yolks in a mixing bowl.

  2. Add the honey to the egg yolks and whisk until the mixture is well combined.

  3. In a saucepan, heat the milk and cream over medium heat until it begins to steam. Do not let it boil.

  4. Slowly pour the warm milk and cream mixture into the egg yolk and honey mixture, whisking constantly to avoid curdling the eggs.

  5. Return the mixture to the saucepan and continue to heat over medium-low heat, stirring constantly, until the mixture thickens slightly. This should take about 5-7 minutes.

  6. Remove the mixture from heat and let it cool to room temperature.

  7. Once cooled, stir in the vanilla extract, ground nutmeg, and ground cinnamon. If you're making an adult version, you can also add bourbon or rum at this point.

  8. In a separate bowl, beat the egg whites until stiff peaks form.

  9. Gently fold the beaten egg whites into the eggnog mixture to add a light and airy texture.

  10. Refrigerate the honey eggnog for at least 2 hours or until it's chilled.

  11. Before serving, give the eggnog a good stir and sprinkle a little extra nutmeg on top if desired.
