Ingredients
2 Tbsp Olive Oil
1 tsp Lemon Juice
2 Tbsp Dijon Mustard
1 Tbsp Dill Fresh Basil or Cilantro
1 Cup Chickpeas
1 Cup Fresh Tomatoes (cherry tomatoes halved or regular tomato diced)
1/2 Cup Red Onion (optional- omit if onion is hard on your tummy) Pasta of your choice- cooked and cooled (I used Penne because that’s what I had in my pantry but Orzo would be nice!)
Directions
Mix together oil, honey, lemon juice, mustard and dill. Add vegetables and cooked cooled pasta and mix together! Super nice on a hot summer day!
